What you'll do Lead service at the pass—timing, quality, communication.
Own prep systems, mise en place, and station standards.
Train new team members; lead sharp, efficient briefings.
Support stock/ordering, control waste, watch costs.
Keep HACCP/food safety spotless; ace audits.
Pre-opening: equipment checks, recipe cards, menu run-throughs.

Clean & calm: Tight mise en place, quiet bodies/hot plates, tidy pass.
